We currently have 2 Exchange 2007 SP3 servers running on Windows 2008. We have one CAS/HUB and one MBX server. These are VMware virtual machines. We are considering CCR and have a few questions. 1) With a CCR cluster created is it possible to have one database in one site and the other database in our DR site. The servers would move with VMware SRM if a disaster. We are looking to protect the Exchange mailboxes. 2) With only one CAS/HUB server that would be acting as the witness and would the single point of failure, is it possible to cluster the CAS/HUB? Can someone provide a link to document for this?

Well, it is possible to have the two CCR nodes in separate sites but it's not a recommended solution. Coupled with the fact that you are using VMware makes it even less of a good plan.
CCR is supposed to be an on-site solution to allow for patching and other maintenance processes.

I would go and have a good conversation with your storage vendor because they will be best places to lay all this out properly.

You most likely won't do any cross-site HA with the CAS/HT but you most certainly can use NLB for the on-site configuration. Have a look at: http://www.msexchange.org/articles_tutorials/exchange-server-2007/high-availability-recovery/load-balancing-exchange-2007-client-access-servers-windows-network-technology-part1.html for an idea.

The File Share Witness (FSW) in your scenario is only used when the cluster already has lost one of its nodes. You don't loose cluster functionality if both nodes are up and the FSW is down.
