It's a tickbox. Click on the "date" link next to the words "Arrange By" (date might say something else obviously). There is a tickbox right at the bottom that says 'conversation'. That was getting on my nerves too, so I just did exactly that.

Sorry to hijack this thread, but in OWA 2010 is there a way to turn it off for all folders.

I have users that despise the Conversations view, that also have literally 100s of folders!

I don't think so. At least I can't find it ;-) But in Outlook you can: Applying custom views to all folders at once
