i just installed E7K beta2 last night and noticed it prompt me to remove SMTP.. SMTP is no longer needed on Hub transport ? is SMTP service only on edge transport now?

Exchange 2007 doesn't make use of the Windows SMTP service any longer, Exchange got it's own one now.

so each hub transport is not using SMTP to route messges ? what Exchange 2007 is using to route emails ? i must assume, all emails go to hub transport and forward to edge trainsport to go out external domain to internet.. am i right ?

Hub Transport servers do use SMTP for connections to the Internet and to Edge Transport servers. However, they do not use Windows' SMTP service at all (unlike previous versions of Exchange). Exchange's SMTP service is entirely independent. Also, message transport between HT servers and MB servers uses RPC/MAPI, not SMTP. In previous versions, communication between the Information Store and the routing stuff used SMTP also.

thanks for the insight.. if i plan to install edge transport, does edge transport need to be member server of the domain or just workgroup ?

Edge is meant to be installed on a stand-alone server located in your perimeter network, in fact you cannt even install the Edge server role on a member server. The Edge server uses a local ADAM store and synchronizes recipient information etc. to it from the AD using an EdgeSync process.
