Edge subscription followed by disabling Internet Send connector?

I'm getting ready to do the Edge ADAM subscription portion of my 2007 configuration.  What I want to do is disable the Internet send function after I do this so that externally heading email does not go out my edge servers and continues to go out my Exchange 2003 bridgehead as it does now.  Will this allow incoming mail but not outgoing mail?

I want to be able to do this so I can concentrate on my incoming filtering settings without having to mess with all the fallout of the outgoing greylisting, etc. that will come from the new edge server pushing out email.  OR is there a way to spoof my edge servers so it looks like the outgoing emails are coming from my older SMTP server so that none of the greylisting rejections will occur?

Carry out the EDGE subscription and it will give option to create a SEND connector to the HUB server, accept it and configure the Send connector in the HUB server to use Exchnage 2003 server for internet outgoing mailflow.

Configure your MX record to point to the the EDGE server and then configure the Anti-spam features in edge server.
