I may have someone hacking my Exchange Sever, and reading other people's mails, is there any way I can actually tell if someone is doing it?

You may have already tried this, but the Exchange Admin program allows you to increase the security logging, so you can check the event log to see who is logging in.

If the hacking is coming in through the IMS - you can also alter the connection logging level.

I would also question the permissions in place on the Exchange organisation.

U need security like encrypting ur messages. This is the right security one should look for. Exchange has a facility for Advanced Security. U can set up this by using Exchange and its KMS
