Exchange 2003 to 2007 Cross Forest Migration

Hi,
 
We are planning to perform Cross-Forest migration from Exchange 2003 [Source forest] to Exchange 2007 [Target forest].
 
The Source forest is runinng Outlook 2010 & the Target forest is running Outlook 2007.
 
The plan is to migrate the mailboxes (and not the user account). In other words, the migrated mailbox will be linked to the enabled user account on the Source forest after the migration.
 
My questions are:
1. Since we are only moving the mailbox not user account, if we use the Move-Mailbox cmdlet to perform mailbox migration, will a disabled user account be automatically created on the Target forest during the mailbox migration process? (from my understanding, we should not manually create a new user account on Target forest as move-mailbox will not recognise the SID for connecting the mailbox to the relevant newly created account).

2. After the migration, will the Outlook profile be automatically updated on the Source forest's workstation? or is there a tool that we need to use to achive that?
