I have read the articles on the 03 to 07 transition and have some problems with the decommission of the 03 server.  When I dismount the stores, my users cannot access other users calendars.  The public folders can be accessed. I also have questions about the routing connectors and how to remove them.
I didn't start the transition, but am responsible for finishing the process.  We want to get rid of the old server but cannot at this point.  My level of experience with Exchange is limited so any help I get will need to be aimed at a newb.  If you need more information or even screen shots of my configuration, let me know.

You need to migrate public folder data which includes the public folder system data over to public folders in Exchange 2007.  That way, when Exchange 2003 is decomissioned, users can still see free/busy calendar data which is stored in the system public folders. 

When you're at the step to remove connectors, you can do so for both Exchange 2003 and 2007 via the Exchange System Manager.  Make sure that your Exchange Server has been configured as the new bridgehad for any companys you have a direct SMTP connectivty to and/or the Internet.
