I am having problems getting Exchange Database Maintenance to run on one of my Exchange 2007 Mailbox Servers. I have tried to set a custom schedule so that it will not interfere with our backups, and have also picked one of the default schedules of 2:00 a.m. to 6:00 a.m., but I am still not seeing any entries in the application log to show that maintenance is starting.

Try turning off the backup completely, then restart the Exchange services so that the new configuration is picked up.
