First you need to check the relevant services are running. MS Exchange IS and System Attendant services. It's not SP3 thats doing it on its own.
What error messages are you getting? What other products are you running on the exchange server(AV etc.)?

What error messages do you see when you try to mount the databases? Anything recorded in application logs regarding MSExchangeIS?

unfortunately these are both generic errors. What you should do is turn up diagnostic logging on MSexchangeis on all categories and try mounting the stores. you should see some MSexchangeIS errors.

To enable diagnostic logging for the MSExchangeIS
1. open Exchange system manager
2. Expand to your server object (the server where the problem lies)
3. Right click and select properties on the server object
4. select the diagnostic logging tab
5. In the lefthand pane high-light MSEXchangeIS
6. select Maximum for all items in the right hand pane
7. In the services restart the MSExchang Information store service
8. See the application log

A sugestion at this point = If the databases are in a clean shutdown, it would be safe to cut and paste all files to a safe place, so that only the .EDB and STM files remained in that directory = The extensions of the files .(the check point file .edb.chk may be causing an issue) Once all files have been moved from that directory, use Exchange system manager to mount the mailbox store. If that fails once again refer to the application log and report the errors.
