Sounds to me that your wanting to do damage to someone server than to learn exchange server. I say this because someone learing exchange would probably not need to learn to do those things you ask for, especially senging spam and "spoofing" a mailbox. Thats my opinion. However, to answer your questions they can be found here. http://tinyurl.com/6qvsra

You still haven't stated what information you are looking for. Anything capable of sending data to an IP address via port 25 can generate spam. There are people out in the world who create "zombie" machines through the use of trojan-horses and spyware so that they can be used to relay spam. You can write your own SMTP engine with scripting languages and compiled languages. I disagree that Exchange Administrators need to understand how spam is created. Spam that hits your system will pretty much look the same because it has to follow the SMTP format regardless of how it's created. What you need to know as an Exchange Admin is what you can do to limit how much of it gets to your mailboxes.

You should start with whichever version you think you are going to be exposed to. There are some concepts that are consistent to all versions. The Microsoft Press training books (for their certification tests) give you an understanding of the "Microsoft" way of thinking. For operational understanding I like (and use) the books written by Jim McBee (you can search for his name at Amazon.com).
