What protocol access is available?
POP3/IMAP?

If POP3 is available then I would remove everything with Outlook for each user to a PST file. Then import the PST file in to Exchange once Outlook has been reconfigured for Exchange.

If there is not access available via POP3/IMAP then you are probably stuck.

Simon.
