I know Exchange has a way to log who deletes a public folder (set-eventloglevel "MSExchangeIS\9001 Public\General" -Level Medium), but is there a way to log who deletes an actual email within the public folders?

You will have to enable Auditing on the server.

Thanks but the article does make a note that Mailbox Access Auditing does not audit message deletions, only successful message access. I want to audit message deletions in the public folders. If you can't do it in mailboxes, then you most likely can't do it in the public folders. Am I missing something?
