MS Exchange 2007 calendar labels/color coding

I am familiar with color coding items with my Outlook, but when I try to use a new public calendar through web access that our IT people set up, I can not find any options to label.  I am trying to set up a scheduling calendar for our company's two locations for our crews.  I want the shedule to be real-time in both locations.  Our old system with a dry-erase board used color coding for our different crews (6 crews max) and I would like to use a similar format so the appointment appears in a specific color so the crews can easily view their day.  Is this possible through Web Access?  Is it an option that out IT people need to configure?  Our IT people don't know of a way to do it.  I think it is apparent that they are not very familiar with the finer points of the calendar options.
