I have two single exchange 2007 SP3 Mailbox Servers (OS = Windows 2003 SP2 Ent) and I am planning to setup CCR cluster with two new servers.
I also have one Hub and One OWA server (exchange 2007 SP3) in Production.
I have followed this link and setup the lab environment.

In lab I have one exchange 2007 sp3 with all roles (Labex1). The two CCR servers are exchange 2007 SP3 rollup 5. I had no issue moving mailboxes not having rollup 5 on Labex1.
In production I have prep two new servers with required role and features and I am at the point to configure the Failover Cluster (OS = server 2008 SP1 R2 Ent). I am also planning to install exchange 2007 SP3 Rollup 5 on these two CCR servers and move about 1200 mailboxes.
Although I did not have problems not having rollup 5 on all servers in the lab, could this cause an issue in production? Anything else I missed or need to review?

I believe you opened the same thread in TechNet forum and Jonas Anderson has answered your question.
Make sure that your active and passive nodes are running the same updates.
