I have an Exchange 2003 server with one mailbox store, I have finished in SAN disk space and I can not expand it , I can create another mailbox store to another server moving mailboxes without losing the functionality of owa-imap-pop3?

What do you mean by "I have finished in SAN space"? You can create a new store and will not lose any access or functionality. But, if you are out of space on the SAN how is everyone storing files? How can you create a new store if there is no space?
The infrastructure where in an exchange server is a clister of vmware thath have a san storage where there isn't more space, i have another new vmrare infrastructure, with a new san. I have a exchange server enterprise i know that i can crate more of one mailbox store but i can create it in the infrastructure where there isn't a disk space. I want create a new server in a new vmware cluster and move some mailbox from one to another , the problem is the service like owa + imap + pop3 don't work fine.

You have three choices.
1) Create a new mailbox store on the same server that points to a different location 2) Create a new server and build a new store on that 3) Move the VM to the new VMWare server
If the current Exchange server is already on a VM (now I'm not THAT versed with VMWare), I'd say you should be able to shut it down, move it to the new VMWare environment and start it back up again.
Option 2 would require licenses and whatnot, unless you plan on decomissioning the original server.
Option 1 would be the quickest, provided you have space available at a location that's suitably fast for Exchange to work with.

That's a fairly big store. If you have anything other than NetApp you are going to have to wait a decent while if you ever needed to do a restore in anger. If you do have NetApp them you haven't run out of space; you can pretty easily get yourself in a state where you can add more storage or move that store to somewhere there is more storage.
I try to create a mailbox store in a different location (your first choice) but exchange want only a local disk not a network disk.
I try the second choice, i install a second exchange server adn i move one mailbox outlook has no problem, but from outside company when i use owa i cannot redirect (example: http://www.mycompany.com/exchange change to newserver.mycompany.locale) because the mailbox is into the new serever, same thing for imap and pop3.
If I did not forget anything the only choiceis the third.

You can't create a store in a NAS location. You have to present a LUN. If that LUN is presented to a Hyper-V or VMware and passed through or using the iSCSI initiator in the guest that's fine. If you are presenting VMDKs to the ESX box over NFS that's fine as well - except that it's not supported by Microsoft. However, your Exchange isn't supported any more anyway so who cares about that.
