How do i redirect a restore job in exchange to another server that is not an exchange server and retreive the mailbox store (information store)

You can't.
The backup of an Exchange database is not a file in the conventional sense. It has to be restored to an Exchange server. If you want to restore the information store then you will have to restore it to an Exchange server, either to a live database or a recovery storage group.
