one of our users has lost there calender entrys. We have a backup from about a week ago. We are using microsoft backup to backup the exchange database etc. What is the best method to restore that one persons calender entrys either to a PST or over the top of his existing calender

You'd restore the information store to the Recovery Storage Group (RSG), then use ExMerge to pull the user information you want into a PST file, then import that file into the user's mailbox.
