Sad story: Exchange 2000 server built on a nice W2K box with the IS on a huge RAID 5 drive. Problem: Drive was RAIDed via Windows 2000 (i.e., software) not using the expensive Adaptec hardware RAID card installed.

I'd like to RAID the drive properly with the minimum of fuss. Is it as simple as:
* Stopping all of the Exchange services
* Backing up the entire drive
* Re-RAIDing the drive
* Restoring everything including the security
* Restarting Exchange

Any advice or experience your be appreciated.

I've had extensive experience with Exchange crashing and having to start from scratch. The best way I would handle this would be to backup the stores, remove exchange (which takes it out of the AD structure); re-raid the drives; reinstall the OS/Exchange and restore the database to the new array. Upon mounting you might get a "database incosistent" error at which you'll have to run eseutil /mh against it. If it's a large edb prepare to wait a while. Once completed, point to the store via the ESM and mount.

One bit of explaination I didn't make clear before...

The W2K/E2K box has two drives:
'C:' - OS, Exchange
'D:' - Information store

Only the 'D:' drive is wrong.
