Is there a way to setup Exchange 2003 so that users can ONLY share their calendar and no other folders? Many thanks in advance for any assistance.

Nope.
As an administrator you cannot restrict the users from doing anything with their mailbox. If they wanted to delete everything, they can. If they want to share everything, they can.
