In our domain each user has several SMTP addresses (alias) to which mail comes into, no problem. But one of my users wants to be able to send out as that alias. Is there any way to do this without installing ChooseFrom?

Nope. Exchange is not designed for a user to send email out from more than one address. As far as Exchange is concerned all users have one address for sending email -the default, and all other addresses are aliases for inbound only. Your only option is additional accounts, with a combination of the From field, Send As permissions and the forwarding option. Simon.
