Separating Exchange 2010 Multi-role Server

Hello all,

This is my first post here at MSExchange.org.  I have rather a simple question I suppose that shouldn't be too difficult.  I have a single multi-role Exchange 2010 installation which I need to break out into two new servers(CAS and Mailbox) and then remove the other as it will not be used in the environment any longer.

My question is as follows:
What would be the most efficient way of accomplishing this task so that MAPI experience the least amount of down-time possible?

The environment uses mixed 2003, 2007, and 2010 Outlook clients.  I have done 2003 and 2010 coexistence without any trouble but I am wondering what would be the best way to redirect clients to the new front-end since the existing Exchange 2010 multi-role server will still be a CAS up to the point of removing it all together and will still be the clients point of mail access even after their mailbox has moved(still pointing to the old front-end multi-role server). 

How do I fade this old front-end out of the equation and get clients using the new front-end after their mailbox has been moved?

Install CAS/MBX on the new Exchange 2010 and then remove CAS and MBX on the 1st Exchange server.Change the ip address of the autodiscover to the new CAS server.

Outlook 2007 and 2010 will automatically look at the CAS server for authenticate but I think Outlook 2003 will have to run the Check Name button again.
