I am going to have 2 - 2010 exchange servers in the same Organization and Domain Forest.
I want,
1 group of Domain Admins to Manage 1 - 2010 Exchange server ,
and a seperate group of Domain Admin to Manage the 2nd - 2010
Exchange Server. but, they can't they can't manage each others
exchange server.

can this be done ?

I assume I just a sign them to the Exchange Server Administrators group? on each Exch Server

Yes, it is possible. Role Based Access Control (RBAC) is the avenue you want to puruse. If I am not mistaken you will focus on scope.
