The alert message we get is:
"The store.exe process is allocating more memory than usual". When we look in the SMTP ques, there are many items listed as retrying, from a "postmaster" account - they are messages being sent to an unknown recipients/domains. We go through them daily and delete them however a new batch comes in daily. We have confirmed that we are not an open relay. We use SBS 2003 - All current service-packs and patches installed.
Any recommendations would be appreciated - Thanks

NDRs from messages that couldn't be delivered. Are you using any of the connection filtering that comes with Exchange 2003? It would help your spam issue quite a bit. Using an RBL zone or 2 will cut back on the amount of spam you're receiving.

It appears to me that a spammer is hammering your door. I recommend to install the IMF (Intelligent Messaging Filter) from Microsoft, in addition to the recommendations using RBLs. Further to this, read the KB187874 on TechNet, describing the "tarpit" feature.
