One of my fellow coworkers had an email that was supposedly sent last Wednesday but was not delivered to their email account until Sunday. He wanted me to verify that this delay did not come from our end.

Any suggestions on how to do that?

Look at the SMTP headers. Open the message, go to View-->Options, copy-and-paste the contents of the Internet headers field into something easier to view (notepad is fine).

You will see each SMTP transfer with a timestamp. You may have to perform some GMT-mathematics. You'll be able to see if one hop delayed the message from that.
