I have a user that is receiving all of the Undeliverable Email notification in his email. The messages are originating from the Exchange Server. It appears that the exchange server is trying to notify this email address that these email addresses are failing. I'd like to know where to change this destination email.

Looks like this user is the postmaster for your domain. Do the simply thing and check that that user does not have the postmaster alias assigned to him also.

If not simply open the help on Exchange 2007 and do a search on Postmaster. The first topic on NDR will guide you step by step.
