I am looking to upgrade one of our servers running Exchange 2007 from Windows Server 2003 R2, to Win Server 2008. Does anyone have any links to documentation on this procedure?

I cannot imagine that being a good idea, let alone possible...to try upgrading the OS with Exchange loaded on it. Your best bet (and to minimize downtime for users) is to bring up a new server with the OS of choice, install Exchange with the latest and greatest patches, then once configured, move your mailboxes from the 2003 box to the 2008 box. Then simply uninstall Exchange 2007 from the 2003 box once all roles and public folder replicas are cut over.
