We have a few users that have left our org, I wish to move their mailbox to the replacement user and still allow message to be sent to the original until transition is completed. What step must I take to accomplish this or is their a KB article to reference?

If you want the mailbox to to receive mail at the old address, you should disable the account instead of deleting it; don't delete the account until you're ready to create the new one for the new employee.
Then delete the departed user's account, and create a new account (WITHOUT a mailbox) for the new user. Then you track down the mailbox in the Exchange System Manager, right-click it, and reassign it to the new account.
If you want that mailbox to still receive mail addressed to the old address, add the old address to the new user's list of email addresses.

I have seen issues when disabling the account. I tend to just change the password until you decide that you want to make the new user.
