I have installed my first exchange 2000 server and a have see that i have a new (remapped)partion named exchange, what is this? and can i change size etc.

The M: drive is a virtual drive, it doesn't really exist, basically its a virtual mirror of the Information Store.
Before messing with the M: drive, please read the below MS KB:
