Does anyone know what firewall ports I need to ope for Exchange 5.5 and 2003?

That depends on what you are trying to do?
for internet mail (SMTP) you need port 25
If you are trying to send email via an X.400 connector its port 102.

I am trying to do the same thing: I need access to shared contacts / calendar, as well as POP3 remotely through Outlook. I know to open 110 for POP3. What ports should I open for shared calendar / contacts?

If you are trying to connect with Outlook using the Exchange Service over the Internet there are a ton of ports to open since Windows Authentication has to occur. If you are connecting the the Exchange Server using Outlook Express, you will only be able to access mail items due to limitations with Outlook Express.
I would recommend using OWA instead, that way you only need to open either port 80 for http or port 443 for https.
With Exchange 2000 or 2003, OWA can access all information like inbox, outbox, calendar, contacts, public folders, etc.
