I am doing a replication of my data across to a second server for recovery purposes and am not sure which folders to backup from the Exchsrvr folders, I have :

ADDRESS
BIN
CONNDATA
ExchangeServer_MEM1
exchweb
imdata
Mailroot
MDBDATA
MEM1.log
RES
SCHEMA
srsdata

... which folders should I select?

Online replication probably won't work well because you won't be able to get exclusive access to the mail stores, streaming files, and transaction logs (*.edb, *.stm, and E*.log).

Your best bet is to use an Exchange-aware backup utility (such as the upgraded NTBackup on your Exchange server or Veritas BackupExec) or to go with an actual clustering solution.
