Which Permissions exactly do I need to "deny" to make an address list not display for a particular user?
I tried this once and really shot myself in the foot. I want to make sure I only modify the needed permissions.

Using Exchange System MAnager, locate the Address List, bring up the Properties for that Address List, and click on Security.
By default, the permissions are inherited from the parent folders above, so if you want to stop someone seeing the users in a particular Address List, you will need to click on Advanced, and remove the tick on "Allow inheritable permissions..." check box, and say copy the permissions, click on "OK", and back on the Security tab for that Address List properties, add the user you want to deny, and set Full Control to "Deny", this will stop that user from seeing the users within that Address List.

How can I hide the list name from even showing up in the list of avilable address lists in outlook? For example I don't even want the users to know there is an "All Users" list.

I'm not sure if you can get rid of "All Address Lists" and "Global Address List" from appearing, but you can make any of the ones you create from appearing.
Using Exchange System Manager, expand "Recipients", and for the properties of "All Address Lists" and "Global Address List" in Security, add the User you want, and for Full Control, set that to "deny".
