I've setup ~5 Exchange 2000 systems in production environments. Normally I use the Domain Administrator account for the Exchange services and to do the installation. Is there a "best practice" account I should use instead?

As Exchange since Exchange 5.5 haven't had the needs for a specific service account (Exchange 2000/2003 runs under local system account), I would say no as long as it has the proper permissions for domainprep/forestprep that is.

I agree. What I normally do for new installations is to create a new user called "Postmaster," add it to the Enterprise Admins and Schema Admins groups, and then install Exchange as that user. Once the installation is complete, I remove Postmaster from those groups. Exchange 2000/2003 run under the LocalSystem context, so you don't need to create a special service account.
