Try working with the message tracking log, which will tell you exactly how many messages were sent / received by the specific user - including more details about the message (for eq, who sent it / subject name etc)

Thx... But i am asking about my organization level ..want to check how many message receiving & sending in my domain.

I was talking on those terms. Well for the entire organization there isnt any way to keep a track (unless ther is some third-party product which i am not much aware).

Some quick search about performance counters (per server basis).
You could check

MSExchangeIS \ Messages Delivered
MSExchangeIS \ Messages Sent

Message tracking is still what you need. The tracking logs will give you the raw information. You will then a third party tool to process those logs. Promodag, Quest Message Stats, Mail Detective are a number of tools that can process those logs and give you the report that you need.

Perfmon doesn't really show the true number as that is reset when the server/service is restarted. Therefore you would have to restart the server at midnight exactly to get an accurate number. However using message tracking logs avoids that.

Agreed. However, message tracking option was long way rejected. Well, the perfmon would quote the number for the entire server as message tracking has the limitation of 1000 items.

Well, atleast a detailed analysis can be done using perfmon with regards to the time frame as to when the peak mails are being received / sent.

User-by-User analysis can only be done using message tracking - however analysis for the entire Organization (that might account for almost 10-15 Exchange servers if at all) can be done using Third-Party SMTP applications (some gateway / firewall etc).
