I need to set up my administrator account to recieve email sent to mailboxes that don't exist. How can this be done?

ie. mail sent to email "something@mydomain.com" is forwarded to the administrator mailbox if that email account doesnt exist.

You can forward all unresolved recipients to a smarthost that will capture the mail (I.E. a seperate Windows 2000 server running SMTP).
Or you can go the distance and do the following:
1) Create & Configuring the Additional SMTP Virtual Server - http://support.microsoft.com/default.aspx?scid=kb;EN-US;q303707
2) On the Default SMTP VS, forward all unresolved to VS 2
2) Create an event sink by using the New Project Wizard within Visual Basic ActiveX that will capture all recipients and deliver to a particular mailbox.
3) Register the Event Sink on the New SMTP Virtual Server

Not sure the exact configuration...Good Luck!
