Am wondering if it is possible to track e-mail to see if the users are using e-mail for work related purposes or for other activities. If so, how can it be done?

Just for a particular user or company wide? For a single user, you could use Message Tracking in ESM. I am sure there are better tools out there for what you want, but this is a free way to check.

If you want to track messages comprehensively then you can go for something like GFI mail essentials with, amongst other things, lets you archive messages which then gives you the sender, receiver, plus the message text.

We've been using this for some time and it works well.
