I have a 100Gb database store running on exchange 5.5 enterprise. I have seen that exchange 2007 standard has no software limit on the database size. I know I will need to migrate to exchange 2000/2003 before migrating to exchange 2007. Is it possible to carry out the move from exchange 5.5 enterprise to exchange 2007 without also purchasing an enterprise version of exchange 2000 or 2003 ?

It is possible but it will mean creating a new Exchange organisation from scratch and exporting mailboxes and folders to files such as PSTs and re-importing them into the new Exchange organisation. It really depends on whether:
a) you need to keep the existing email setup. DNS, MX and email addresses
b) how many users to migrate
c) how much public folder data to move

For a small setup (<50) its possible but larger ones, it may be better to upgrade to 2003 first.
