first CAS2010 in Exchange 2007 setup

Current Setup:

Exchange 2007SP2
2 CAS/HTS in NLB VIP is 192.1.1.100. Both roles on same server.
Mailbox server.
Outlook 2007/2010.


Action Plan:

setp.com /adprepare

Plan to introduce CAS and HTS on the same server running Exchange 2010SP1 with NLB enabled.


- Get new SAN Certificate for Exchange 2010 CAS. With the names: webmail.domain.com, autodiscover.com, CAS2010.domain.com.

- Remove NLB from Exchange 2007 CAS/HTS and assign the same VIP to CAS/HTS2010 NLB. So we don’t have to go around changing firewalls, DNSs and Photo Copiers etc.

Question:
I know we have to keep our Exchange 2007 CAS, HTS as long as we have users on Exchange 2007 mailbox. After I have followed the above steps how does the Outlook users on Exchange 2007 communicate to users mailboxes on Exchange 2010. I know all the communication takes place via CAS/HTS between both versions of exchange.

I just want to understand the order of the mail flow. Also please advise if I have missed anything above.
