Actually viewing the system requirements for Exchange 2k7 would help: http://technet.microsoft.com/en-us/library/aa996719.aspx It doesn't list Server 2008 there. You also need to use a 64 bit machine.

From the same article: The full installation option of Windows Server 2008 must be used for all Exchange 2007 SP1 servers

Don't know where you're seeing that at,it says in the second table: Although you cannot install Exchange 2007 RTM on a server running Windows Server 2008, Exchange 2007 RTM is supported for use with Windows Server 2008 directory servers. Similarly, Exchange Server 2003 Service Pack 2 (SP2) cannot be installed on computers running Windows Server 2008, but it is supported for use with Windows Server 2008 directory servers. It also goes on to say: To deploy Exchange 2007 SP1 on Windows Server 2008, you must install Windows Server 2008 on a computer that does not have Exchange installed, and then install Exchange 2007 SP1. To learn more about running Exchange 2007 on Windows Server 2008, see "Exchange 2007 and Windows Server 2008" in Exchange Server 2007: Platforms, Editions, and Versions. All the info needed to do this is there, but they contradict themselves a bit along the way don't they. And..my bad, it does list 2008. I only glanced at the list.

The only thing about putting it in production would be the fact that 2008 is fairly new, which should at the least make you want to really test everything before actually putting it to use. Beyond that..as long as you're using RTM versions of server and exchange, should be ok I would think.
