All I want to do is shift the mail responsibilities to a new server and bring down the old server. Do I have to go through all the steps of ForestPrep, DomainPrep, etc.? The new server will have a different name as well. Has anyone gone through this yet?

No, If the new server will be in the same forest and the same domain as your old server you don't have to run ForestPrep or DomainPrep.
