Retreiving mail from dedicated off-site server

I have inhereted the responsibilities of a simple front / back end exchange server.  Our mail is hosted off-site on a dedicated server which is working fine and takes care of a lot of spam filtering, etc.  All clients are downloading by way of POP from the off site server which inturn "populates" the exchange server.  I know it is the incorrect configuration and requires all clients to not only have the exchange client but a pop client as well so it needs to be configured correctly.

I can add a secondary MX record on my dedicated off-site server and point it to my public IP and let the PIX firewall route it to either the front end or back end exchange server (I'm guessing the virtual SMTP server on the back end) and then utilize the mail wizzard to configure the server for incomming mail.  Is this an acceptable way to configure the messaging environment?

I have read several documents but have read too much into it and probably made the task more difficult than it actually is.
