I have an AD Domain that is currently running with a .local name.  I am currently considering implementing an Exchange server.  I have some experience with Exchange, but I've never seen it used on a .local AD Domain.  Is there a way when you install Exchange to make it give out default email addresses that are different than your AD Domain name?  So, instead of the users getting a example@example.local address, they get an example@example.com address?

Yes you can.
Search on the forum and/or articles for "recipient policies" and you will find your answer how to configure this.
