i have ...after 15 days of activity of my exchange server , 5 Gb of logs .
Can i delete the oldest or no ?

No, definately not. If you do full backups of Exchange, it will purge the oldest logs for you!

how to for, to free space in the partition full ?

In which case you either create a new partition or add another disk and relocate the transaction logs to the new partition or disk (see Storage Group properties in Exchange manager). to free up space on original disk.
