I am working on a class project that involves creating an exchange cluster. We do not have access to some of the hardware requirements to setup the cluster. (Actually just the Storage Area Network) Is it possible to deploy exchange in a cluster environment without a SAN. If so how do I configure the Physical Disk / Storage location?

This very site http://www.msexchange.org/pages/search.asp?query=cluster#TUT has some details for clustering and setting it up on virtual server to save the external resources.
http://www.microsoft.com/technet/prodtechnol/virtualserver/deploy/cvs2005.mspx is another good place for 2003.

So my only solution is using Virtual Server and setting up virtual storage? I have had very bad experiences with Virtual Server to this point and am not excited about this at all. If there are any other solutions I would love to hear them!

Would something like Microsoft Storage Server 2003 work here? I read a few white papers and this software appears to be a SME solution when a SAN/NAS is not economically feasible.

Also this software may be available to us under our MS Academic Alliance. (Free software = TYTYTY!!!!!)

Hiya, sorry to hear about the problems that you have had with MSVS - I have used it on many occasions for "Lab" virtual clusters and it has worked a treat.
I am not certain that Storage Server is really going to help you simulate a cluster at all - but if you really do not like the idea of MSVS what about VMWARE server http://www.vmware.com/products/server/ which is also pretty good (and free).

If you are really unkeen on using a vitalization product your options when class rooming are a little limited unless you are configuring a single node/local quorum
