Here is the scenario, a company uses @abc.com on their internet email for years and they have decided to change it to @xyz.com. What is the proper way of changing the domain without reinstalling the whole system?

Make sure the new domain's MX record mirrors the existing MX record, that is ultimaterly resolves to the IP address of the Exchange server running the IMS.

Add the new domain to the IMS routing tab as an Incoming domain.

Change the SMTP addresses of your users via the Site Addresseing object.

It gets a little more complicated with the SMTP address if you want to run both addresses in parallel for a bit, although this is easier if you have some sort of external gateway that rewriteds incoming addresses - you can them simply remap the old domain to the new domain.
