Hmmm, interesting question and one that I am not sure anyone outside google can answer. Google has a history of writing in house solutions - for example the famous Google FS - however the mail platform might be loosely base around sendmail but I strongly doubt it is sendmail in its true form.
They do use Linux, but AIX is quite prevalent within Google (so I have been told).

Google also produce some very interesting mail headers which reveal nothing about the platform.
My personal opinion is that Google does its own thing, it is almost certainly not Windows based, nor do they use Exchange (bad choice) - and if they are using a Unix / Linux equivalent then it would certainly be customized.
