    How do I do this?

I tried creating a custom recepient w/ the proper SMTP address (i.e. disgruntledformeremployee@hispersonaladdress.com) but this appears to only block this address from SENDing messages (kind of pointless).

How to I block mail from an external sender to all (or specific) mailboxes?

In Exchaneg Admin, in Connections, open the Properties of your IMS.  On the Connections tab, click the 'Message Filtering' button, and type in the external address you want to block.

You may need to stop and restart the IMS service for this change to take effect.
