I am trying to install Exchange 2007. I am now up to the point
where I get an error saying that the Offline address book definition is missing.
I am somewhat stumped. I have followed the instructions about how to
resolve this problem right up to the point where I should click the "appropriate offline address book" on the Client Settings tab. Unfortunately, I have no idea what that means.

Could someone please illuminate what is going on?

The Offline address book on exchange 2007 requires autodiscover to be working properly. Most of the issues with OAB and autodiscover comes from the certificate installed on the Exchange server. Can you confirm you have all the alternate names installed on the certificate and also can you confirm that all the correct URLs have been setup?
