Status: offline 		what is the best practice of removing the CAS role off a exchange 2007 server (Hub and Mailbox role server) and install the CAS on a standalone server.

Do i install the new CAS role first or uninstall CAS from the MB server and then reinstall it on a new box?

Status: offline 		Since a CAS is required for a Mailbox server, I'd install a new CAS first before removing the old.  I did this in the lab today and it appears fine.

Status: offline 		Ditto what Neil said.  Bring up the new CAS, remove that role on the other box.  Clients should find the new CAS just fine.
