During coexistance period between SendMail and Exchange 2007, how to do the message routing?

Bring all the mail into one or the other.
Send to the inet via one or the other.

You will have to create a sub-domain (smtp) to handle the reroute and use host file entries to pick up the proper server for the subdomain.
