Baloo, First, you need to arrange for something to receive mail sent to xyz.com. That is done using DNS MX records, and if Exchange is the receiving server, you need to configure it to accept mail for xyz.com. Now, if the same user objects are going to accept mail for both the old and new domains, you configure this using a Recipient Policy to stamp the objects with the desired SMTP address format (as an alias). You can also use the Recipient Policy to make xyz.com the reply address.
